SPECIAL OF THE MONTH: $2 off per pound of Murcia al Vino, a pasteurized goat’s milk cheese, washed with red wine twice a day for 10 days. Has a bold, floral bouquet & wine aroma.
P’tit Basque, a sheep’s milk cheese that so mild that every child loves it.
Délice de Bourgogne, a sweet triple cream, sweeter than Brillat-Savarin.
Blanc Bleu du Rizet, a very rare goat, dry but soft and aromatic with a light mushroomy but tangy goat flavor.
La Tur, a very fresh and soft, creamy paste with a deep mixed cow, goat and sheep flavor.
Fleur de Maquis, a sheep’s milk cheese from Corsica, slightly acidic and sour. Has a mild earthy flavor that becomes sharper with age.
Goat Milk’s Butter, European style butter made in California. Light and flavorful. For eating not too much for cooking.
Myzithra or Ricotta Salata, depending where you are from − the first one is its Greek name, the second is Italian. A raw goat cheese, mild but salty. Imagine a dry feta. Very good but better on salad or pasta.
Valencay, a pyramid shape cheese that was changed by Napoleon I. Decadent goat from creamy to sharp with smooth bites in between.
Cabra Quinta, lightly salty because aged in sea salt.
Applewood-smoked cheddar, excellent by itself but delightful melted in dishes as tacos and mac-and-cheese.
