File Systems of Coffee open its doors in Summer 2023.
What is JBS?
Japanese Black Sugar, also known as Okinawa black sugar or Kokuto, is distinct for its relatively unrefined nature compared to typical brown sugar. While brown sugar is often created by mixing white sugar with molasses syrup, JBS is produced through a more traditional and labor-intensive process. This involves boiling sugarcane juice for several hours until it transforms into a dark, syrupy consistency, which is then allowed to cool and harden into blocks of black sugar.
At File Systems of Coffee, JBS is served with their signature latte, as well as teas like matcha and hojicha.
