Ubriaco del Piave (the drunk from Piave)
– an earthy, milky paste with a red wine flavor
– bathed in red grape must for 45 days
Rocastin
– a very creamy paste with a sweet taste
Saint Maure de Touraine
– a straw runs through each log, promoting air flow and even maturation
– with age, expect a firmer, flakier texture, beneath a white and blue mold-mottled rind
– piquant, acidic, and walnutty
Valencay
– a rarefied sour savor with a salty flavor that turns to a sweet nuttiness
Fleur de Maquis, a sheep’s milk cheese from Corsica, slightly acidic and sour. Has a mild earthy flavor that becomes sharper with age.
